I tried to put together my observations based on some notes during daily use, also against other knives.The elmax holds an edge really well but i have my knife shop sharpen that one. The S30v didn’t send to be that much better at holding an edge compared to the CPM154 and it’s harder to sharpen. Of course I have a small collection so maybe other manufacturers have different performance depending on heat treat and edge geometry

Uddeholm Vanax is very similar to their earlier PM stainless steel Elmax but with much of the carbon being replace with nitrogen: However the heat treating response between the two steels is quite different and Elmax reaches significantly higher hardness levels: Again there is a combination of factors at play here. In which case, I believe Elmax is the clear winner. If memory serves, S35VN is like S30V, but with better toughness and possibly a more consistent heat treat.
